Paulette Inostroza, Sous Chef

Chef Paulette was born Santiago Chile to a Italian Mother and a Spanish Father. Her passion for cooking started as a child cooking beside her mother. She went on to Duoc U.C. to get a degree in International Cuisine. To further her career, she moved to Miami and started work at Cuccina D’Angelo. She soon moved on to open Café D’Angelo as a Chef de Partie and transitioned into the Sous Chef at the cafe.

After Café D’Angelo she moved on to Sarafina as the Sous Chef for two years. After Sarafina she went to Luca Restaurant for nine years as the Chef, where she rounded her culinary skills learning to create desserts, pastries, sauces and breads. Chef Paulette began incorporating her knowledge of South American cuisine on the menu.

Subsequently to her stretch at Luca she moved here to the Royal Blues Hotel & Chanson Restaurant where she still has a strong influence to the cuisine.
